Fulton is a restaurant steeped in the tradition of fresh seafood and gourmet foods. Joseph Gurrera, owner of Citarella Gourmet Markets, Lockwood & Winant Seafood Wholesalers and Meat without Feet -- his wholesale distributor business at the Fulton Fish Market -- knows his stuff. He has relationships with both local and international importers, which gives him unprecedented access to the world's finest seafood. His executive chef, Jeremy Culver, is a graduate of the Chicago Institute of Cooking and Hospitality who fine-tuned his craft at Park Avenue Café under Chef David Burke and Chef de Cuisine Neil Murphy, Gramercy Tavern, Nicole's and Home prior to joining Joe Guerrara’s Joseph’s, where he was promoted to executive chef in January 2005 before taking the helm at Fulton. There, his new American seafood menu is a welcome addition to Manhattan’s Upper East Side. Behind the scenes running the show is Helen Gurrera, Joe’s daughter. A strong restaurateur in her own right, Helen’s made her mark by moving from the ground floor up within the restaurant industry. After college she opened Citarella Watermill, Citarella's first Hamptons location, then subsequently opened other Hamptons eateries with Citarella East Hampton and Tutto Italiano, a traditional Italian salumeria. After taking on more responsibility and experiencing more store and restaurant openings, Helen was promoted to co-general manager of Citarella and is now president of the family-owned company. A more capable and pleasant, customer-friendly leader would be hard to find. Juan Carlos Ortiz, a seven-year veteran of Jean Georges’ empire, ably assists Helen and couldn’t be more accommodating. Appetizers: Scallop Ceviche (lemongrass, cantaloupe, cashew, $14); Mussels (smoked tomato, Belgian, Caribbean, $12); Green Salad (bibb, romaine, heirloom tomatoes, $11); Fritto Misto (calamari, shrimp, oyster, sand dab, $16); Arugula Salad (pine nuts, artichoke, manchego, $13); Grilled Octopus (chemoula, potato, frisee, $15); Soft Shell Crab (watermelon, mustard greens, mustard seeds, $15); Mushroom Risotto (Meyer lemon, parmesan, basil, $14); Crab Cake (celery and apple slaw, mustard sauce, $14).
