Corporate Executive Chef Ralph Scamardella's resume is filled with notable restaurants, such as the Plaza Hotel and Le Cygne, as well as noteworthy mentors like Daniel Boulud, who he worked under while he was at the Polo Restaurant. A graduate of New York Institute of Technology, Chef Scamardella mastered the business of hotel and restaurant management and soon was on his way. From Vanessa's to Ganni and Hoester's Market, he eventually went on to become a driving force behind the opening of New York's popular Carmine's. After spending 15 years in kitchens, he left the daily grind to consult for such popular restaurants as The Strip House, Harrah's Casino and Cesca. Raised in an Italian-American household in Brooklyn by a father who grew up on a farm in Naples, this chef grew up alongside fresh ingredients and Old World cuisine. Now he calls both Lavo (Las Vegas) and Tao (Las Vegas and New York) home, and his fans could not be happier.

Appetizers: Baked Clams Oreganato (Littleneck clams, toasted bread crumbs, garlic butter, $14); Eggplant Parmagiano (roasted eggplant, spicy marinara, mozzarella, $15); Tuna Tartare (diced yellow fin tuna, avocado, crispy garlic, black olive dressing, $15); Crispy Fried Calamari (fresh lemon, parsley, spicy marinara, $16); Kobe Stuffed Rice Balls (garden peas, mozzarella, spicy marinara, $16); Sauteed Mussels Spicy Marinara (garlic crostini, extra virgin olive oil, pomo doro, $16); Spedini ala Romano (toasted fresh mozzarella, lemon caper sauce, $17); Fried Fresh Mozzarella (basil focaccia, arugula salad, $18); Prosciutto Service (18 month old San Danielle prosciutto, seasonal fruit, house specialties, $19); Seared Sea Scallops (cannellini bean ragout, pancetta, fennel, pesto, $21); Kobe Beef Carpaccio (black truffle vinaigrette, rocket lettuce, $24).

Raw Bar – Crudo: Yellow Fin Tuna Carpaccio (lemon oil, watermelon radish, fresh cracked pepper, fennel, $14); Atlantic Salmon Crudo (fresh dill, horseradish cream, truffle salt, extra virgin olive oil, $16); Jumbo Shrimp Cocktail (four jumbo shrimp, spicy cocktail sauce, lemon, $21); Maine Lobster Cocktail (chilled lobster, fingerling potato chips, garlic aioli, $22).
