Since beginning his career at the Culinary Institute of America in Hyde Park, N.Y., Executive Chef/Partner Kerry Simon has graced some of Manhattan’s most legendary kitchens, including La Cote Basque, Lutece and Jean George Vongerichten’s Mercer Kitchen. In fact, Chef Simon was the youngest executive chef at the Plaza Hotel's Edwardian Room. He's also opened Blue Star and Starfish at the Raleigh Hotel in Miami. It appears, however, that Vegas is where Chef Simon's heart belongs, as he's been there for approximately 12 years. His partner is noted restaurant consultant Elizabeth Blau, who began her career with a very high profile restaurateur -- Sirio Maccioni of Le Cirque fame -- and subsequently has been a driving force in the establishment of Las Vegas as one of the country's finest culinary destinations. Blau has worked with Steve Wynn at MGM/Mirage and at Wynn Resort Hotel Casino to create some of the most superb dining experiences in Sin City. Together, she and Chef Simon opened Simon Kitchen + Bar in the Hard Rock Hotel and SIMON LA at the Sofitel. Now they've opened CatHouse at the Luxor Hotel & Casino and Simon at Palms Place. Breakfast:

Fruits, Fruit Juices and Yogurts: Assorted Squeezed Juices (orange, grapefruit, pomegranate, apple, cranberry, tomato, $7); Veggie Cocktail (juice of beet, carrot, celery, cucumber and spinach, $10); Protein Shake (vanilla or chocolate met rx, your of choice fruit, non-fat milk, $10); Berry Smoothie (yogurt, banana, mixed berries, $9); Granola Parfait (organic vanilla yogurt, local honey, seasonal fruit $9); Selection of Fresh Fruit and Berries (fresh lime, $10).

Cereals: McCann's Steel Cut Irish Oatmeal (raisins, brown sugar and hot milk, $7, with berries or bananas, $10); Granola (oats, toasted almonds, golden raisins, sunflower seeds, $6); Assorted Cereals (raisin bran, Capt'n Crunch Berry, Corn Flakes, Special K, Cheerios, $5, with berries or bananas, $8).
