    Escargots Bourguignon en Persillade

Chef Anthony Raggiri has left Brooklyn for the Upper East Side, and neighborhood locals sure are glad he did. If you happen to venture off of the island of Manhattan and into Brooklyn, you'll know his name very well, as he was executive chef at Isobel, a popular French Mediterranean restaurant on Henry Street in Brooklyn Heights. A native of Marsailles, Chef Raggiri started his culinary training early, learning from his father's butcher shop in France. He studied at one of the top culinary schools in France and trained throughout France and the Mediterranean. His voracious appetite for the culinary arts brought him to the United States, where he learned from Rick Laakonen of River Cafe fame. When you taste Chef Raggiri's creations at his Manhattan restaurant, you'll know that the years he spent training were well spent. Even the most educated chefs, however, need help. Ably assisting Chef Raggiri is Head Chef Adil Fawzi, a Casblanca native who has studied at Le Lycee Rene Auffray and Maxim's school, a noted culinary institution in Paris. After one year as sous chef at Bistro 61, he's now one of the three partners of this neighborhood gem. Below you'll see a sampling of his latest menus. The menus themselves are quite interesting, and not just because of the preparations that they showcase. That's because they are provided to you inside authentic vinyl record album covers. It adds a lovely touch, as each member of your party gets a different album cover, which creates conversation and conjures up memories. Of course, if that's not enough to put a smile on your face, then the friendly service surely will. If you can't make it into the bistro, then delivery is available, free between 51st and 71st Streets and between the East River and Park Avenue. Outside those parameters, delivery charges apply. Please note that any changes, substitutions or sharing may be subject to a minimum charge of $2. A 20 percent gratuity will be added to all parties of six or more.

La Salade d'Endive

Lunch: Soups: La Soupe de Poisson (rich fish soup served with crostini, rouille and gruyere cheese, $8); La Soupe a l'Oignon (French onion soup, $8); La Soupe du Jour (soup of the day, P/A).

Salads and Appetizers (add to your salad: grilled chicken, $6 / grilled shrimp, $8): La Salade Verte (mixed green salad, tomato and balsamic vinaigrette, $7/$12); La Romaine (classic Caesar salad, $9 / topped with mild Cajun grilled chicken, $14); La Salade d'Endive (endive, pear, pecans and Roquefort cheese, balsamic vinaigrette, $12); Salade de Foie de Volaille (frisee salad with chicken liver flambe with cognac, onion confit, croutons, green olives, artichoke hearts, cumin and warm goat cheese, $13); La Tarte Aux Poireaux (onion and leek tart served with baby spinach salad and sun dried tomato, $12); Escargots Bourguignon en Persillade (baked snails in a garlic and parsley butter, served with a side of mixed greens, $11); Le Tartare de Thon (sushi grade tuna with scallions, radish, sesame, soy sauce and cilantro, $14).

Mussels (French fries served with large portion): Les Moules Marinieres (steamed mussels with garlic, shallots and parsley in white wine sauce, $9/$14); Les Moules Provencales (steamed mussels with pastis, garlic, shallots, saffron, tomato and basil, $9/$14); Les Moules a la Marocaine (steamed mussels with cumin and coriander broth, red onions, raisins, cilantro and roasted almonds, $9/$14); Les Moules a la Moutarde (steamed mussels with grained and Dijon mustard, tarragon and a touch of cream, $9/$14).

Sides: Sauteed Spinach, Mixed Baby Vegetables, Brussels Sprouts or Mashed Potatoes ($6); String Beans, Sauteed Mushrooms or Sauteed Artichoke Hearts (small, $6 / large, $9); French Fries or Couscous (small, $4 / large, $6).

Sandwiches (served with French fries and salad): Panini Vegetariano (grilled vegetables, arugula, tomato and fresh mozzarella, balsamic vinaigrette, pressed on a baguette, $11); Panini Parisien (French ham, cornichons, parsley butter and arugula, balsamic vinaigrette, pressed on a baguette, $11); Merguez Sandwich (spicy lamb sausage with grilled vegetables, harissa and lemon confit, pressed on a baguette, $12); Panini al Polio e Pesto (grilled chicken, pesto, sun dried tomato and eggplant caviar, pressed on a bun, $12); Bistro 61 Burger (topped with sauteed onions, assorted mushrooms and Roquefort cheese, $13); Rossini Burger (topped with truffle foie gras and onion confit, $17).
