Comfort Zone
Although CUT has two locations -- the initial location in Beverly Hills and now the second, in Las Vegas -- each has its own style. Both, of course, are ultra sophisticated, sexy steakhouses, but each has its own personality and appeal. If you'd care to read more about the Las Vegas location and learn some of our tips for enhancing your dining experience, please read on.

    Reservations
Although reservations are requested at least two weeks in advance, the staff is lovely and will try to accommodate any walk-ins or later reservations. We visited during its inaugural month and noticed people successfully making same-day reservations. Please note: The restaurant generally fills up around 7:30 p.m.

Seating
Seating is more than generous with tables for four at 36 inches square and chairs at 18 inches in diameter. There are a variety of seating options, including seating at booths and chairs in the dining room. The lounge has even more options with banquette seating, freestanding chairs and comfortable, low-backed leather barstools.

Atmosphere
The atmosphere at CUT is hip and upscale. It's certainly one of the places to dine in Vegas. Even with its great reputation and fabulous design, there isn't an ounce of pretension. As a matter of fact, the staff is downright nice. Brian was one of our servers and he was excellent -- very well informed and friendly. If you have a question your server can't answer, which is highly unlikely, ask Steve, the manager. He couldn't be more helpful. Music from speakers in the ceiling plays throughout the service, ideal not for a quiet and intimate meal, but rather for a sexy chic steakhouse experience.

Restrooms
The restrooms are located inside the restaurant with same-level access; they're extremely generous in size.

Dress Code
The dress code at CUT is business or resort casual. Collared shirts with sleeves are preferred, but this is Vegas and they understand that one might have slightly less formal attire. It's always best to use your discretion.

Parking
Gratis valet parking is available at the Palazzo, as is gratis self-parking. There are also multiple cabs available at the hotel.

Awards
Because it had only been open for a few months when we visited, we didn't expect CUT's Las Vegas location to boast any awards. Its Beverly Hills sibling, however, has received much praise from The New York Times, The Los Angeles Times, The Wall Street Journal, Wine Spectator and Bon Appetit, which has named it one of the top three steakhouses in the United States. Additionally, CUT has received the 2008 Michelin Guide's One Star Rating and was named Best New Restaurant by the James Beard Foundation in 2007, not to mention Restaurant of the Year in 2006. We therefore expect to see similar honors for the Las Vegas location.

*Please note that the restaurants featured at TravelsinTaste.com may have changed their personnel, menu, pricing, decor, hours of operation, etc., since our last visit. The competitive and creative nature of the fine dining scene virtually assures that changes will occur on a frequent basis in order to make diners happier, meals more pleasurable and visits more frequent. Given their frequent fluctuations, most restaurants welcome inquiries about their current hours, menu and more.
