Switch Executive Chef Renee Lenger has hung his knives in some pretty glamorous places, including Vienna, New York, Houston and Palm Beach Gardens, to name a few. His flair for steak and seafood is the ultimate headline act at Switch. He began cultivating his culinary knowledge at a young age, as his father was a professor at the esteemed Culinary Institute of Vienna, from which Chef Lenger ultimately graduated at the top of his class. His path to Vegas is no less impressive. Although he spent the early part of his career in Austria at Zu den drei Husaren, where he worked under three-toque chef Ewald Placchutta, New York is where he’s made his mark. In fact, a few years after moving to Manhattan Chef Lenger became a key member of the Glazier Group, which is owned by renowned New York restaurateurs Penny and Peter Glazier. It was in New York that Chef Lenger gained critical acclaim working at
Strip House ,
Michael Jordan’s The Steak House N.Y.C. and the Monkey Bar. New York was also where he worked alongside
David Walzog, former executive chef of Wynn Las Vegas’
The Country Club and now executive chef of
SW Steakhouse in the same resort. Chef Lenger moved to Vegas to take over The Country Club and now has made his way to Encore in order to direct and produce the culinary theater that is Switch.
