    Prosciutto San Daniele

The world-renowned Valentino in Santa Monica is not the only place you can taste Piero Selvaggio’s magnificent cuisine. That's because Sin City has its very own Valentino, too, where you can sample his beloved food-and-wine experience. James Beard Award-winning Executive Chef Luciano Pellegrini created the menu and has been with the restaurant since 1999 as both executive chef and partner. Under his leadership, the restaurant has scored several Epicurean Awards from Las Vegas Life Magazine. Because Chef Pellegrini has won the James Beard Foundation's coveted Best Chef Southwest award, you know you're in for a wonderful meal. Upon arriving in the United States in 1985, Pellegrini's resume was already impressive, as he'd studied at the prestigious San Pellegrino hotel school and worked at the Michelin one-star Locanda dell' Angelo in Bergamo -- one of the only two Michelin-rated restaurants at that time. His American resume includes such notable restaurants as Valentino, Primi and Posto. He learned part of his craft -- the art of grilling -- in Lombardy at Da Toso in Fruili, which is known for open-hearth cooking and sausage making, and another part -- fish preparation -- at Brunu Libralon's Antica Zecca, outside Turin in Piedmont. Finally, for those of you who simply can't eat in a restaurant that's not been part of the latest foodie broadcast craze: Chef Pellegrini has been featured on both the Food Network and the Discovery Channel. Appetizers: Prosciutto San Daniele (served with mixed olives and grilled garlic bread, $16); Shrimp and Beans Casserole (sauteed in butter and garlic with arugula, $16); Beef Carpaccio (with arugola parmesan shavings and cipriani dressing, $15); Fritto Misto (calamari, shrimp and mixed veggies with spicy aioli, $15); Grilled Pizza (with aromatic tomato sauce, cheese and fresh herbs, $12); Bruschetta al Tonno (garlic brushed grilled bread with tuna salad and mozzarella, $14); Soup of the Day ($7).
