Double Helix is the brain child of Rob Goldstein and Raymond Nisi. Goldstein, president of the Venetian, called Nisi and told him he wanted a wine related store and wine bar in the center of his upscale shopping mall in the Palazzo. Nisi's idea was not to have a typical round wine bar that one walks up to, but rather a more intimate set-up. He therefore closed the circle to make it separate from the shopping. He made it unique in another way, too, as Double Helix serves between 45 and 49 wines by the glass -- most of them not typically poured by the glass, as most restaurants and bars consider them too expensive to serve that way. So, if your shopping companion wants a Cosmo and you'd like a nice glass of wine, but you don't want to pay for a whole bottle, this is the place to go.

Indeed, if you want something special -- not just the usual house wine -- you'll find it here. Serving such notables as Ken Wright "Savoya Vineyard" Pinot Noir, Gaja Ca'Marcanda and "Promis" Cabernet /Sangiovese, not to mention such hip boutique wines as Kim Crawford Sauvignon Blanc, Double Helix is an oenophile's paradise. That's because you can get a variety of boutique and upscale wines, all of which you can simply sip for 2 oz., drink for 5 oz. or share with a friend by the bottle. And, if you've enjoyed your selection, you can buy it across the way at the retail store and have it shipped home. Or, shop first and drink your purchase at the bar while nibbling on Emeril's tasty treats. Either way, you'll find out quickly why Double Helix has become the favorite watering hole for several local sommeliers who have marveled at its selections and reasonable prices. They've even confessed to Nisi that they can't seem to get some of these bottles themselves.
