Executive Chef Gregory Pugin does not disappoint. If his name sounds familiar it's probably because he is a protégé of “Chef of the Century” Joel Robuchon. Not only did he work as an assistant in Robuchon's laboratory and on his French TV program in 2002, but he has also opened restaurants around the world with the legendary chef, in places like Macau, Lisbon, Tokyo, Las Vegas and, ultimately, New York, where he opened L’Atelier de Joel Robuchon at The Four Seasons Hotel after an extended tour at the Mansion in Las Vegas, Robuchon’s first U.S. venture. So, as you can see, perfection is practically Chef Pugin's middle name. He started his career at 17 with an apprenticeship in the Basque region of France under Jean Marie Gautier, one of France’s most renowned masters, at the Hotel du Palais. Several years later he was an apprentice at the Compagnon du Tour de France. There he was awarded the title of Campagnon du Tour de France Compagnion, which led to the beginning of his association with the legendary Robuchon. Ultimately, Chef Pugin's journey culminated at Veritas, where he has made many diners forever happy.

Appetizers: Summer Market Salad (tuna belly confit); Frog Leg Salad (marinated chanterelles, haricots verts, fresh almonds, truffle vinaigrette); Peekytoe Crab (shaved beets, corn vinaigrette, honey melfor dressing); Blue Fin Tuna Tartare (quail egg, bell pepper); Langoustine Carpaccio (lime, pink peppercorn, chive, yuzu vinaigrette); Foie Gras (red wine poached, onion marmalade); Jamon Iberico Pata Negra (pain tomate, bell pepper royale, eggplant caviar); Lobster Nage (lobster in vin jaune, duo of zucchini).
