Although many consider the star of the Veritas show to be the wine, the restaurant's cuisine more than holds its own! Executive Chef Gregory Pugin has a significant amount of fine-dining training, as he’s worked with “Chef of the Century” Joel Robuchon to open his restaurants in Macau, Lisbon, Tokyo, Las Vegas and, ultimately, New York, where he opened L’Atelier de Joel Robuchon at The Four Seasons Hotel after an extended tour at the Mansion in Las Vegas, Robuchon’s first U.S. venture. Despite his training with Robuchon, Chef Pugin has a style all his own that's evident in fresh dishes such as his signature Lobster Nage, which is basically a lobster swimming. The lobster is carefully placed in the center of a vin jaun with seasonal garnishes such as zucchini, asparagus, squash and cucumbers. This is just one of Chef Pugin’s creations, however; there are many, many more to try!

   
     
    
Bar

Directly in front of the exposed brick wall in Veritas' bar and lounge area stands a modern, highly polished granite bar atop a solid wood frame. Paired with about nine chocolate-colored, high-backed woven leather chairs -- each adorned with overstuffed chocolate leather cushions -- the bar has plenty of room for both dining and imbibing. Four thin filaments suspended from the ceiling hang down and act as pendant lights, culminating in clear cones that illuminate the bar, which is also enhanced by rows of track lighting. The bar itself, which is decorated with elegant orchids, has a granite top and a light wooden base. Behind it are four wooden cabinets that hold six shelves each and carefully guard some of the high-profile wine for which the restaurant is so well known. Underneath is a glass shelf that sits atop the refrigerators; invisible from outside the bar, it's lit from below and holds several traditional bottles of liquor.
