A Personal Conversation with Chef Andre Rochat
Chef Andre Rochat of Alize at the top of the Palms Hotel in Las Vegas discusses the special aspects he's incorporated into the design of his own restaurants, including some of the mishaps that he's avoided, as well as the evolution of fresh produce in Vegas during the past three decades. He also opens up to us about his passion for and collection of fine cognacs. We even see his wine cellar and some of the special signature bottles of vino that he keeps inside it. Chef Rochat has long been considered the founding father of fine cuisine in Las Vegas, with three award-winning restaurants to his name, including Alize, Andre's and Andre's at the Monte Carlo. He's a resident chef who provides truly exceptional dining experiences.
