Over the past 10 years this talented young chef has worked for several top hotels and restaurants throughout the Northeast. Most recently, Amoroso worked with two distinguished chefs and restaurateurs; Michael White and Rick Moonen. Amoroso joined Michael White's vision at Fiamma Trattoria & Bar at MGM Grand, Las Vegas as Executive Chef. Prior to working for White, Amoroso worked with Moonen, an early mentor, and honed his craft at three of Moonen's restaurants: first as Sous Chef/Chef de Cuisine at Oceana, then as Chef/Consultant for the opening of Branzini and finally as Executive Chef of RM.

Upon graduating from the Culinary Arts Institute of Hudson County College, Amoroso received his initial training in the hotel industry at properties like the Hilton at Short Hills and the Hamilton Park Hotel & Conference Center, both in New Jersey. He also worked at the Atlantic Inn at Block Island in Rhode Island and at the Dumont Plaza & Shelburne Murray Hill Hotel in Manhattan. In all positions held, Amoroso participated in menu development, kitchen management and operational systems development. All great preparations for his collaboration with Michael Mina.
Amoroso has attended the Aspen Food and Wine Classic, has made several appearances cooking at the The James Beard House and has appeared at cooking demonstrations and classes in Las Vegas.
