Peaches have become an American favorite. Most of us have fond memories of biting into a juicy peach or savoring that last bit of peach cobbler after a Sunday dinner. What some of us don’t realize, however, is that picking the right peach can make a world of a difference in the taste and texture of your dish.

What is a peach?
Peaches, a member of the rose family, were first cultivated in China. Travelers carried the peach seed to Persia and to Europe, before the fruit was finally brought to the United States in the 1600s. Peaches are yellow and red in color and the flesh of the fruit ranges from yellow to white, dependent on the variety.

Are there different kinds of peaches?
Although peaches are available year-round, the available varieties are dependent on the season. Queencrest, or semi-freestone, peaches are grown from late April to June. The flesh of these peaches is typically yellow and firm. In mid-June Elegant Lady, or freestone, variety dominates the market. This variety of peaches has a bright red skin with a yellow flesh. On the off-season, most peaches are imported into the United States from other countries such as Chile and Mexico.

Where can I buy the freshest peaches?
Peaches are at their prime June - August. Look for peaches that are soft to the touch, are bruise-free and have a fragrant smell. Most ripe peaches will be red with slight yellow undertones in skin color. Peaches perish quickly, so buy peaches slightly under-ripened if you do not plan to eat them immediately.

How should I store peaches?
If your peaches are not quite ripe, place the fruit in a paper bag, loosely fold the bag and leave for 2-3 days. Check the fruit for ripeness daily.

Never store unripe peaches in the refrigerator, a plastic bag or in direct sunlight. Once the fruit is ripe, it can be stored in the refrigerator for up to one week.
