With cuisine that spans the Mediterranean, featuring influences from Spain, France, Italy, Greece and North Africa, there's no one better than Executive Chef Brian Kay to prepare it. Because Chef Kay has honed his craft in such exotic locales as Hawaii, the Virgin Islands, Key West, Hong Kong, Vail and Vegas, he has earned many awards for his work, including AAA Four-Diamond ratings and a four star Mobil rating, in addition to awards from the James Beard Foundation, Wine Spectator and DiRona. Known for his inventive "Conch Fusion Cuisine," he certainly knows what it takes to prepare the exotic cuisine at Trina Restaurant and Lounge, as evidenced by the spectacular taste sensations that are prepared daily in his kitchen. Created from ingredients that are always fresh, naturally healthy and unprocessed, these dishes provide the fiber, protein, fat and complex carbohydrates needed to sustain today’s busy lifestyles!): The Energizer (egg white omelet with goat cheese, young asparagus and fresh dill, $13); Sliced Seasonal Fruit (Meyer lemon "ounce cake" and fruited yogurt dipping sauce, $11); Steel Cut Irish Oats (seasonal fruit compote, $9); Granola & Yogurt Parfait (fresh seasonal berries, $9).
