Sizzling Calamari and Rock Shrimp*
Although Wolfgang Puck makes frequent appearances in and out of the kitchen at all of his restaurants, he can't be everywhere simultaneously. After all, his restaurant empire includes Spago, Chinois, CUT, Postrio, The Source, Trattoria del Lupo, Wolfgang Puck American Grille, Wolfgang Puck Bar & Grill, 2021, Puck's Vert and Red Seven. Between the restaurants, the cookbooks, the catering and the cafe's, he's a very busy man. Luckily, he has able help in Chefs Luis Diaz and Rene Mata, as well as pastry chef Junuen Saldana. Nightly, these three prepare the wonderful Asian-French delights that you see below. One interesting note: In April 2007, Chef Mata prepared the final meal in the Cornel Hotel School's 18th annual Guest Chef Series, reflective of the Chinese New Year. Under Chef Diaz and Chef Mata's direction, Chinois on Main has produced its first new menu in 20 years! Please note that the menu is family style.
