    Sizzling Calamari and Rock Shrimp*

Although Wolfgang Puck makes frequent appearances in and out of the kitchen at all of his restaurants, he can't be everywhere simultaneously. After all, his restaurant empire includes Spago, Chinois, CUT, Postrio, The Source, Trattoria del Lupo, Wolfgang Puck American Grille, Wolfgang Puck Bar & Grill, 2021, Puck's Vert and Red Seven. Between the restaurants, the cookbooks, the catering and the cafe's, he's a very busy man. Luckily, he has able help in Chefs Luis Diaz and Rene Mata, as well as pastry chef Junuen Saldana. Nightly, these three prepare the wonderful Asian-French delights that you see below. One interesting note: In April 2007, Chef Mata prepared the final meal in the Cornel Hotel School's 18th annual Guest Chef Series, reflective of the Chinese New Year. Under Chef Diaz and Chef Mata's direction, Chinois on Main has produced its first new menu in 20 years! Please note that the menu is family style. Chinois Chicken Salad*

First Flavors: Crispy Spring Rolls (with stir fried duck and vegetables, $16.50); Sashimi of Fluke and Tuna Tartare (with sevruga caviar, $25.75); Sweet Maine Crab and Pork Shumai (with chili oil and rice vinegar, $19.95); Tempura Ahi Tuna Sashimi* (with fresh uni sauce, $24.95); Warm Sweet Curried Oysters* (with cucumber sauce and salmon pearls, $14.75); Stir Fried Sonoma Lamb (with crispy garlic and mint, $17.50); Chinois Chicken Salad* ($15.50); Steamed Asparagus with Crispy Veal Tongue (with oyster black bean sauce, $14.50); Malay Coconut Soup with Lobster Dumplings ($12.75); Sizzling Calamari and Rock Shrimp Salad* (served in a won ton cup with Chinese chili paste, $27.75); Sugar Cane Grilled Shrimp (with kefir lime and hot peppers, $19.95).
