Chef Pietro Rota, Executive Chef of La Marea at The Tides South Beach, demonstrates how to properly fillet a Dover Sole. Chef Rota certainly knows his fish, having worked in some of the world's most famous kitchens, in Italy, London, Germany, France and Brazil. He prides himself on perfection, as his clientele can be somewhat demanding; his previous position was as Executive Chef at Il Sole in Hollywood, where some of Hollywood's biggest stars dine so often that they consider it their personal dining room. Today, he's come to the East coast to bring his Italian influences, along with his focus on freshness and quality, to La Marea.
