If you don't know Emeril Lagasse, you've probably been hiding under a rock for the last 18 years or so. A television personality of Food Network fame, a food correspondent for ABC's "Good Morning America," a bestselling author and an award-winning chef, Emeril has 11 restaurants to his name, spanning New Orleans, Orlando, Miami, Atlanta, Mississippi and, of course, Las Vegas, where he has three amazing eateries. He's also a philanthropist as head of the Emeril Lagasse Foundation, which creates educational opportunities for children. Emeril -- the brand -- is everywhere. Emeril the man, however, can't be. He's therefore anointed Jean Paul Labadie as Chef de Cuisine at Table 10. Chef Labadie perfected his craft at Emeril's flagship restaurant in New Orleans, then left Louisiana to work his way up from Sous Chef to Executive Chef at Emeril's New Orleans Fish House in Vegas, Chef Lagasse's third restaurant. Cold Starters: Table 10 Salad (baby greens* tossed with balsamic onion dressing, Romanita tomatoes*, cucumbers and a parmesan cheese tuile, $10); Tartare Trio (salmon, tuna and hamachi with three sauces, $12); Marinated Goat Cheese (imported Spanish olives, peppadew peppers and field greens* with fresh herb* vinaigrette and olive oil crostini, $11); Snake River Farms American Kobe Beef Carpaccio (baby arugula*, Gorgonzola crackers and fresh artichokes, $19); Wilted Spinach Salad (fresh spinach*, sliced red onions and warm malt vinegar dressing with almond crusted brie cheese, $9); Baby Bibb Lettuce (pickled fennel dressing, shaved parmesan cheese, pickled red onions and homemade bacon, $9).
