Located on the edge of the Palazzo's casino floor is one of Las Vegas' most magnificent and unique restaurants, Restaurant Charlie. Immediately you'll note its striking exterior, which is comprised of rich wood alternating with etched glass that's evocative of Japanese timber framing. After opening the wave-handled glass doors and passing through them, you are in the elegant hostess area. Dramatic flowers and lush greenery decorate the circular room, the walls of which are decorated with bands of hardwood. The juxtaposition of a convex hostess station, a convex wall mount and an illuminated ceiling with thin pendant lighting creates a unique effect. It is this room that forces your decision and bridges multiple dining experiences -- Bar Charlie to the right, which is the less formal but nonetheless elegant or tasty option, or the more formal restaurant and the city's only spectacular kitchen loft toward the left.

   
     
    
Should you take the route to the right, you'll find yourself inside Bar Charlie, an intimate room where Trotter presents his interpretation of kaisecki, a Japanese degustation menu. Bar Charlie serves an eight-course tasting menu for $175 and a 14-course tasting menu for $250. Both meals are prepared before guests' eyes so that they can watch the customized preparation of fish, purees and emulsions as part of their own personal dining experience. The chefs here like to have fun with the guests and provide them with a superior and unique dining experience. For example, if you tell Jason that you love tuna, the next thing you know you'll have tuna in a number of different -- and entirely new to you -- preparations! The etched glass and wooden piers in the wall provide separation from the casino floor, yet additional privacy in case you care to look out into the casino while keeping those on the casino floor from looking in. The focus of the mood-lit room is the bar, made of chiseled bluestone and green marble. Seating at the bar consists of ergonomic and comfortable armless stools, which have low backs and are upholstered with an earth tone floral pattern atop dark wooden legs. The room features a golden hue thanks to spotlighting toward the back of the bar and rectilinear cloth-covered pendant lighting over the bar, which adds a dramatic effect. Two chefs prepare their special creations for you before a backdrop of golden- and blue-glazed tiling. They'll place your items on the bar, made even more elegant by the dainty flowers strategically placed on top of it. The muted earth tone theme is even prevalent in the geometric patterned carpeting. Bar Charlie fits approximately 18 guests.
