Although there is no "celebrity chef" in the kitchen, the cooking technique at Chima is nonetheless intriguing. It's a Brazilian barbeque technique that involves seasoning the meat and placing it on skewers before cooking it over an open flame. Barbecuing is taken so seriously in Brazil that there's even a statue of a man cooking in Nova Brescia's central plaza -- the Brazilian barbeque capital. You don't have to go all the way to Brazil, though, to enjoy this authentic cooking technique; you can sample its fruits right in Fort Lauderdale. If you choose, you can watch the meat roasting through the window in the outdoor kitchen before you enter. Otherwise, sit and enjoy your meal and the ensuing show that's put on inside the dining room by a flurry of gauchos.

   
     
    
Flank Steak

Once you are seated, your server presents you with a series of four cheesy breads, along with a turkey spread and four meatballs. Next you are invited to go to the salad bar, where you have unlimited access to a variety of items. You'll note that your table is set with a disk and a pair of tongs. When you are ready, you simply flip your disk to the "yes" position from "no" and the flurry of gauchos begins. Each gaucho comes to your table and presents you with a different cut of meat, served on long skewers and taken off with very long knives. If you so desire, he will slice a piece for you, which you may take with your tongs and place on your plate. It's as simple as that. If you'd like it rare, medium or well done, they will provide that for you, too! Dessert and drinks are served by the servers.
