Crostone con Prosciutto di Parma e Salsa di Olive

Jacopo Giustiniani's dream was always to have a wine bar in New York City -- and now it's a reality. No stranger to wine, Giustiniani inherited his family's winery -- the 47-acre Fattoria Sarde Giustiniani, located in Colline Lucchesei in the heart of Tuscany -- from his grandfather. The vineyard is rich in tradition, as it's been owned by the Giustiniani family since the 19th century. Upon inheriting it, Giustiniani immediately sought to enhance the vineyard, implementing modern techniques and dedicating an entire acre of it to cultivating new grape varieties. Furthermore, for the past two-plus years Giustiniani has been the wine buyer for the Sant Ambrose restaurants -- a name that many New Yorkers salivate over when they hear it. Giustiniani's crown jewel, however, is his wine bar and restaurant, Felice. In addition to the 20 wines that it serves by the glass and the 100 that it serves by the bottle, Felice offers a wine list that includes labels from Giustiniani's vineyard, including the namesake Felice label, which is a white wine blend of Vermentino and Chardonnay. Then there's the food, which is equally splendid! In fact, it has a familiar and fabulous feel, as it's prepared by Chef Simone Parisotto, former chef at Emporio Armani Cafe in Italy and Sant Ambroeus in Southampton, N.Y. It's all in the family here, and believe us when we say that this is a family you want to know.
