Noted chef Fiorenzo Trunzo sets the fare at Dal Toro, which serves both lunch and dinner at its posh location in the newest resort-hotel-casino on the Vegas Strip, The Palazzo. Although Chef Trunzo was schooled in Milan, his grandparents and parents are from Calabria, where he spent his summers and cultivated a rich heritage in the traditions of Calabrian cooking. He worked in his first professional kitchen at 14 and never looked back. His menu is reminiscent of the region, which is a hidden gem that houses some of the most flavorful and spicy food in Italy. Rich in powerful flavors and home to a myriad of trees, including lemon, almond, fig, pepper and olive, the region is also known for its abundance of fresh fish and vegetables As a matter of fact, the menu includes Chef Trunzo's grandmother's lasagna, which was the centerpiece of the family table on certain Sundays and special occasions, and which still makes him feel connected to the traditional roots of his family's cooking. Below are some of Chef Trunzo's creations; rest assured, however, that for special events, the menu is even more extensive and can be created collaboratively with the restaurant's highly experienced director of special events, Lesley TerBorg.     Polpette di Granchio

Lunch: Antipasti e Insalate: Minestrone (seasonal vegetable soup made with vegetable stock, $7); Insalata della Casa (mixed greens, house-made croutons, shaved parmesan, house vinaigrette, $8); Insalata Caprese (fresh mozzarella with tomato, basil, oregano); Chop Salad (chopped salad with romaine, radicchio, avocado, tomatoes and cucumbers, with blue cheese dressing, choice of chicken breast or seared ahi tuna, $15); Carpaccio (thinly pounded Kobe style beef, topped with shaved grana, capers, arugula and lemon olive oil, $17); Calamaretti (baby squid, lightly floured, served with a spicy marinara sauce, $13); Polpette di Granchio (fresh crab cakes with lobster sauce, vegetable mirepoix, crispy capers and balsamic reduction, $15).

Panini: Cheese Burger (classic house-made Kobe style burger with lettuce, tomato and onions, $14); Panino di Pollo alla Milanese (lightly breaded chicken breast with arugula, basil pesto and sliced tomatoes, $12); Panino con Tacchino (roasted sliced turkey breast with provolone cheese, avocado, lettuce, tomatoes and herb mayonnaise, $12).

   
     
    
Pizza Margherita

Sides ($3 each): French Fries; Roasted Potatoes; Salad.

Pizza: Margherita (mozzarella, tomato sauce, oregano and fresh basil, $13); Capricciosa (prosciutto cotto, button mushrooms, olives, artichokes, mozzarella, tomato sauce and oregano, $15); Vegetariana (fresh mozzarella, tomato, eggplant, zucchini and asparagus, $14); Diavola (spicy Andui sausage, roasted bell peppers, caramelized onions, tomato sauce, smoked mozzarella, $15).

Pasta: Capellini al Pomodoro (angel hair pasta tossed with tomatoes, marinara sauce, fresh basil and extra virgin olive oil, $14); Fettuccine alla Bolognese (house-made fresh egg fettuccine with traditional meat ragu and parmesan cheese, $18); Linguine allo Scoglio (linguine pasta with clams, mussels, prawns and scallops tossed with tomatoes and white wine, $23); Ravioli al Formaggio (house-made ravioli stuffed with ricotta, gorgonzola, provolone, parmesan cheese in an asparagus cream sauce, $16); Lasagna della Nonna (baked pasta layered with sausage, meat ragu, marinara, hard-boiled eggs, prosciutto cotto, fresh mozzarella and pecorino cheese -- Chef Trunzo's grandmother’s authentic recipe, $15); Penne alla Norma (penne pasta tossed in a light tomato sauce, eggplant and shaved dry ricotta cheese, $16); Tortiglioni Rustici (short pasta tube tossed with bacon, chicken, shitake mushroom, thyme, parmesan cheese and brandy cream sauce, $18).
