TravelsinTaste.com had the good fortune to visit with Chef Pietro Rota at his latest home, La Marea at the Tides South Beach, where he is Executive Chef. Fresh from the California coast, where he was previously Executive Chef of Il Sole in Hollywood, dining room to the stars, he told us in great detail about La Marea, and even provided us with a video tour of the restaurant itself. We discussed the menu at length, including the fresh ingredients that it features, Chef Rota's specialty dishes and the healthy, clean cooking style that predominates in his kitchen.
