Charlie Trotter's in Chicago has long been known as one of the world's finest restaurants -- and Charlie Trotter has worked hard to keep it that way. With 14 cookbooks, three management books and an award-winning TV series on PBS -- The Kitchen Sessions with Charlie Trotter -- under his belt, Trotter is no doubt a culinary king. His restaurant empire includes not only Charlie Trotter's, but also Trotter's to Go, a gourmet takeout retail shop that's also in Chicago, and "C" at the One and Only Palmilla in Las Cabos, Mexico. Trotter has plans for two new restaurants, too -- one in the Elysian, on Chicago's Gold Coast, and the other in New York, where it will be Manhattan's first Charlie Trotter experience. Then there's Restaurant Charlie, recently opened in Las Vegas. While it provides diners with the opportunity for an a la carte menu -- something new for Trotter -- Restaurant Charlie doesn't otherwise deviate from Trotter's successful formula. His cuisine, which is known for utilizing the freshest ingredients, and for its lack of cream and butter -- which Trotter believes mutes the flavor of the food -- results in a magnificent flavor explosion that doesn't disappoint! If you do care for the tasting menu, you have a choice, as there are two: an eight- and a 14-course menu! Read on for all the delectable items that Restaurant Charlie has to offer. Although the restaurant specializes in seafood, rest assured there are several items for the land lubbers, too!

Traditional Caviar Service (The selections of caviars have been chosen because of the sustainable methods in which they have been cultivated and for their superior quality): Uruguay Farm Raised Osetra ($175 / 30 grams); California Estate Farm Raised Osetra ($150 / 30 grams); Iranian Osetra ($225 / 30 grams).
