RM Seafood, Rick Moonen's masterful shrine to sustainability, recently re-opened its upstairs fine-dining room, which was showcased in an episode of "Top Chef" season six. The restaurant has so many options -- from the sushi bar to the raw bar to the more casual downstairs to the more formal upstairs -- so there's something for everyone. If you'd like the inside scoop on this restaurant -- complete with tidbits like where to get the best seat, where to park and how to dress -- please read on.

Reservations
Reservations are strongly recommended for upstairs and can be made by clicking the "Make a Reservation" link above, or by calling the restaurant directly. Alternatively, the restaurant does accept walk-ins.

Seating

Seating is incredibly comfortable at RM Seafood -- especially upstairs. Downstairs has banquette seating along with armless wooden chairs, which have rounded backs and caramel-colored leather seats. Upstairs, chairs are made of mahogany with upholstered seats that measure 20 inches wide, framing tables for four that are 39 inches square. If you'd like even more comfort, the leather booths along the wall offer seating for two to six people. Seating in the lounge upstairs has not only round leather barstools with chrome bases, but also oversized cream-colored leather chairs and couches with overstuffed pillows. Private dining upstairs includes slightly more modern chrome chairs.

Atmosphere

You can experience a number of atmospheres at RM Seafood. Downstairs is fun and casual, with a sushi bar, a raw bar and café seating. The party definitely starts here. Upstairs, however, is more elegant and refined. Paul, the general manager, runs a tight ship. Our server, Jeffrey, was amazing; he walked us through every dish with the utmost knowledge of the product, the preparation and the ingredients; he was the most thorough server we'd ever met! Private dining is also available. In concert with the fine-dining experience upstairs, the lighting there is more muted. Downstairs, on the other hand, is well lit. In both places, the kitchen area -- well visible on each level -- is pristine, with stainless steel and white finishes.

Restrooms are located inside the restaurant, with same-level access.

   
     
    
Dress Code
The dress code is business casual for upstairs, casual for downstairs.

Parking

Gratis valet parking is available at Mandalay Bay, as is self-parking. There also are multiple cabs available at Mandalay Bay.

Both RM Seafood and Rick Moonen have won many accolades and honors, including: Award of Excellence, 2006, Wine Spectator; Best New Restaurant, 2005, Food & Wine Magazine; Four Star Award, Mobile Travel Guide.
